Lamb Shanks-Spicy Apricot Style – Camp Cooking is an simple and easy recipe to make for the family whilst camping. It is a one camp oven wonder with minimal ingredients. Best served with some veg and mash (that is what the missus said, I am editing this to say ‘with rice and Tabasco sauce’). You can always swap the shanks out for some chicken marylands (which is what I would prefer). I am afraid my family will require much more chilli then in this recipe (that’s why I love you babe).

The Recipe for Lamb Shanks-Spicy Apricot Style in case you didn’t follow was:

  • Brown 2 Lamb Shanks
  • in Oil
  • add 1 onion roughly chopped
  • add 1 can of apricots
  • add 1 can of apricot nectar
  • add 1 teaspoon of chilli powder (yes she said 1/2 a teaspoon but that would just be silly) and
  • cook to perfection in a camp oven.

Can also add Ayam brand or Keen’s curry powder. If you need to man it up.

Clearly this can be done in another type of cooking container if you have failed to evolve to camp oven status. But lets face it you are never going to get the results you are looking for if you cook your lamb shanks in something other than a caste iron camp oven.

Now all you will need to do is sit back,open a drink, relax and wait. Open another drink, relax and wait. Open another dirnk…yeah you get the picture. 🙂
